Scrambled Egg Sandwich

Made with roasted red peppers and cheese.
A classic sandwich served on white bread.
I like this best served on un-toasted bread.
This makes a great lunch with potato chips,
a slice or a whole dill pickle on the side.

2 slices white bread
1 tablespoon mayonnaise
1 large egg, scrambled
dash of ground black pepper
1 slice roast red pepper
1 slice American cheese

Spread mayonnaise on one side of bread,
top with egg, ground black and red peppers.
Add on a slice or two American cheese.
Top with another slice of bread, slice and serve.
