Baked Ricotta Cheese

I first read about this baked ricotta cheese
in a cook book by Jeff Smith,the Frugal Gourmet.
You must drain the cheese to remove the water.
The first time I made this I didn't and the
cheese never really browned in the oven.
This one is worth you trying if only because.

Ingredients:
1 pound ricotta cheese
olive oil
salt
ground black pepper

Directions:
empty tub of ricotta cheese into
a colander or cheese cloth over a bowl.
Place in refrigerater overnight
to drain out excess liquid.
Remove cheese and place in baking dish
drizzle with a little oil,
add a little salt & pepper.

Place in a 300 degree oven for an hour,
or until edges are lightly browned
and the surface is just starting to color.
