I used to cook sweet potatoes in the oven,
and it does intense the sweet potato flavor.
But cooking them in the microwave is just
faster and the flavor is just about the same.
Ingredients:
8 medium sweet potatoes
4 tablespoons melted butter
1/2 teaspoons salt
2/3 cup milk
freshly ground nutmeg
Directions:
Place whole potatoes in a glass bowl,
with a little water to steam them.
Cook on high power until tender.
Drain potatoes and peel.
Mash well with the butter, salt, and milk.
Beat until light and fluffy.
Sprinkle with freshly ground nutmeg before serving.
