Gourmet fried fish when done right
is just the best lunch sandwich,
You don't need to deep fry them
although that's good to do.
These sole filets are brown,
crunchy and crispy with just the
right amount of bread coating.
Not oily at all and the lemon
punctuates this dish with flavor.
Ingredients:
fresh sole filets
flour for dreadging
milk for dreadging
salt to taste
sweet smoked paprika
panko bread crumbs for coating
Directions
Put milk,salt and paprika in small bowl
all purpose flour in another bowl
panko breadcrums in another bowl.
Dip sole filets in flour bowl then milk bowl
then in panko crumbs bowl, to coat all over.
Place coated filets in 360 degree F.
oil in deep fryer til browned,
or pan fry in 1/4" olive oil for
a few minutes on each side til done
or spray a sheet pan with cooking spray,
place sole in a single level in pan,
bake at 350 degrees for about 20 minutes.
Spinkle lemon juice over filets and
garnish with fresh lemons.
