I can only tell you how to make these from memory
because there is no written recipe from my grandmother.
I remember helping her make these many times when I was young.
These are in the comfort food category, very very good.
This is a seat of your pants kind of a recipe.
Ingredients:
6 potatoes,peeled and quartered.
Flour
water
salt
bacon grease
Directions:
Put potatoes in a pot, cover with cold water.
Bring to a boil and cook potaotoes
until the potatoes are almost fork tender.
Add enough flour to cover the top of the pot
to cover about 1/4 inch high,
cook until bubbles appear
and the flour is cooked through.
Drain water, add salt and mash potatoes.
Let cool and then form into dumplings.
My Grandmother formed them into short cigars.
Place dumplings onto a cookie sheet to dry
for about two hours.
Heat bacon grease in a fry pan,
fry dumplings until browned on both sides.
