Vegetarian Veal Parmasan

I came up with this recipe many years ago,
it's a little involved and messy to prepare
just as the real veal parmasan recipe is
because you use three different bowls,
one bowl each for the flour,
beaten eggs and bread crumbs.
This could be called an egg parmasan dish.
If prepared properly you would think
that this is a real veal meal.

Ingredients:
2 eggs
1/2 cup milk
1/2 cup Italian flavored bread crumbs
1/2 cup flour
1 6 ounce can tomato paste
1/2 teaspoon Italian seasoning
1 tablespoon suger
olive oil for frying
salt

Direction:
To make tomato sauce,
open the can of tomato paste,
put in a bowl and add two cups water,
Italian seasoning,sugar and salt.
Heat in microwave until warm.

In a small bowl mix eggs and milk,
In a heated frypan cook egg mixture
until just firm enough to remove from pan,
let cool and cut the egg into two inch wide strips.
Dip the egg strips in flour, then the milk
and then in breadcrumbs to coat all over.

Fry the breaded egg in olive oil
and brown on both sides. Remove from pan
and serve with tomato sauce over it or on
the side and with grated parmasan cheese on top.
