This is the best way to use up some left over cooked ham,
Making a ham and pickle spread that can be used on a sandwich
or simply on a few leaves of fresh lettuce along with some
cottage cheese as a lite lunch menu idea on a hot summer day.
Ingredients:
1/4 cup mayonnaise
1/8 cup sweet pickle relish
1/2 teaspoon freshly ground black pepper
1 pound smoked boneless ham, chopped fine
1/4 cup red onion,peeled and diced
1 stalk celery, chopped fine
Directions:
In a large bowl, stir together the mayonnaise,
relish, pepper and salt until blended.
Add the ham, onion, green pepper
and celery and toss until coated.
Refrigerate leftover salad in a covered bowl.
