Classic Tuna Melt Sandwich

Serve with a bowl of piping hot vegetable soup
and a green vegetable such as peas or green beans.

Ingredients:
2 6-ounce cans solid white tuna, drained
1/4 cup light mayonnaise
4 Slices white bread toast or English muffins
1 large tomato, sliced into 8 slices
8 slices American cheese (or provolone or Swiss)

Directions:
Preheat broiler. Mix drained tuna and mayonnaise in a bowl.
Split English muffins and place halves on a broiler pan.
Place under broiler (approx. 3” from heat)
for about 2 minutes to toast (or toast in a toaster).
Top each bread or English muffin half with about 1/4 cup of tuna mixture. Place a tomato slice on top of tuna mixture.
Place cheese slice on top of tomato.
Return to broiler and broil 30 seconds to 1 minute to melt cheese.
