Tangy Tuna Salad

The roasted red peppers compliment
the Italian vinaigrette for a tasty,
tangy updated tuna salad.
Perfect on a hot summer evening.

Ingredients:
1/2 lb. spiral or penne pasta
2-6 oz. cans tuna, drained
1/2 cup Italian vinaigrette dressing
1/2 cup onion, diced
1/2 cup roasted red peppers, diced
1/2 cup frozen peas, thawed
lettuce leaves (optional)

Directions:
Cook pasta according to directions on package.
Rinse pasta under cold water until cool, drain.
Place pasta in a large bowl.
Add tuna, Italian vinaigrette dressing, onion,
red peppers and peas and mix well.
Serve on lettuce leaves.
