Garden Fresh Grilled Vegetables

Vegetables picked fresh from the garden,
brushed with olive oil and seasoned with some nice
fresh garden herbs are just about as good as it gets.

Ingredients:
1 zucchini, cut in 1/4-inch slices
1 yellow squash, cut in 1/4-inch slices
4 shiitake mushrooms
1 small red onion, cut in 1/4-inch slices
1 red bell pepper, cut in 1/4-inch slices
1 yellow bell pepper, cut in 1/4-inch slices
1 fennel bulb, cut in 1/4-inch slices
3 tablespoons olive oil
2 tablespoons chopped garlic
2 sprigs of fresh thyme

Directions:
Rub all the vegetables with the olive oil,
salt, pepper, garlic and thyme.
Place on a hot grill and grill
for 2 minutes on each side.
Serve either hot or cold.
