Flank steak is the cut of meat used to make beef fajitas,
steak and cheese hero's, grinders and sub sandwiches.
Use this recipe to grill the beef and go wild from there.
Ingredients:
1 (1 to 1 1/2-pound) Beef flank steak
3/4 cup unsweetened Pineapple Juice
1/2 cup Lime Juice (from concentrate)
1/4 cup steak sauce
Ingredients:
Score meat by making shallow diagonal cuts
on one side at 1-inch intervals in diamond pattern.
Repeat on other side. Sprinkle with salt and pepper.
Place meat in plastic bag set in shallow dish.
Combine pineapple juice, lime juice
and steak sauce in small bowl.
Pour over meat; seal bag.
Marinate in refrigerator 4 to 24 hours,
turning occasionally.
Drain meat, discarding marinade.
Grill meat on rack of uncovered grill
directly over medium coals until desired doneness,
turning once (allow 12 to 14 minutes for medium).
Garnish with fresh herbs, pineapple and tomatoes if desired.
To serve, thinly slice meat across grain.
