Halibut with Butter Herb Sauce

Ingredients:
1/4 cup olive oil
2 tsp. salt
2-1/2 tsp. black pepper, divided
2 Tbsp. fresh lemon juice
2 Tbsp. fresh parsley, chopped
4 6-oz. halibut fillets
1 cup butter
2 garlic cloves, peeled and minced
2-in. piece gingerroot, sliced
3 Tbsp. fresh cilantro, chopped

Directions:
In a stainless steel or glass bowl, combine olive oil,
salt, 2 teaspoons pepper, lemon juice and parsley.
Place fillets in a resealable plastic bag and add marinade.
Seal and place in the refrigerator
for 1 to 3 hours, turning occasionally.
Place butter in a microwave safe bowl and melt.
In a small bowl, combine remaining black pepper,
garlic, ginger and cilantro.
Slowly whisk pepper mixture into melted butter;
set aside.
Oil grill grate, set it 4 inches from the heat and preheat to high.
Remove fillets from marinade and drain off the excess; discard marinade. Grill fillets 5 minutes per side or until fish
is done when easily flaked with a fork.
Transfer to serving plates and serve with butter sauce.
