These are a crowd pleaser of an appetizer,
light and crunchy and full of flavor.
The perfect finger food at any gathering.
Ingredients:
6 fresh celery stalks,rinsed and dried
1/4 cup canned crushed pineapple, drained
1/2 cup cream cheese, softened
2 tablespoons creamy peanut butter
1 tablespoon honey
1/4 cup raisins,finely chopped
or and some dried fruit,finely chopped
freshly grated paresan cheese
hot sauce if desired
Directions:
Rinse the celery, trim off the leafy parts,
and cut on the bias into 4-inch pieces.
In a bowl, combine the drained pineapple,
cream cheese, peanut butter, and honey.
Stir with a rubber spatula until well mixed.
Stir in the chopped raisins or fruit bits
and hot sauce, if desired.
Using a table knife, fill the groove
of each celery stalk with the cheese mixture.
Place the parmesan cheese in a shallow bowl.
Dip the cheese filled part of the celery in the parmesan.
Place cheese side up on serving tray.
