I wanted to bake or roast some chicken breasts at the same time,
in the same pan along with some rice. I decided to try it this way.
I also added some fresh sliced oranges and spices to the pan.
It came out great, the chicken moist and tender, the rice creamy good.
I think Pork chops could also be used instead of chicken.
Ingredients:
2 chicken breasts, with skin on
1 cup Basmati rice, uncooked
2 oranges, sliced and seeded
4 garlic cloves, peeled and crushed
2 cups water
2 tablesppons olive oil
1/2 cup fresh mushrooms, sliced
1 tablespoon un-salted butter
1 teaspoon sweet smoked red paprika
1 teaspoon salt or to taste
1/2 teaspoon saffron threads
1/2 teaspoon ground black pepper
1/2 teaspoon dry mustard powder
Directions:
Wash chicken and pat dry remove skin if desired.
Season chicken with salt, pepper, mustard and paprika.
Put olive oil and butter in a flat baking or roasting pan.
Heat a minute and add mushrooms, saffron, garlic and rice in pan.
Cook a minute or two, add 2 cups water, salt, pepper and stir.
Lay chicken on top of rice, skin side up if using skin.
Arrange orange slices around and on top of chicken.
Bake uncovered at 350 degrees F. for 1 hour.
More water might need to be added, cover if it gets too brown.
