Serve this delicious flavorful chicken with hot cooked rice
and steamed broccoli or your family's favorite vegetable.
Ingredients:
4 chicken breast halves
juice of 2 oranges
juice of 1 lemon
juice of 1 lime
2 tablespoons red wine vinegar
3 tablespoons honey
dash ginger
dash nutmeg
1/2 teaspoon dried leaf basil, crumbled,
or 1 1/2 teaspoons fresh chopped basil
1/2 teaspoon garlic powder
2 teaspoons cornstarch
1/4 cup flour
1 teaspoon Creole seasoning or seasoned salt
olive oil or cooking spray
sliced green onions
Directions:
Combine orange, lemon, and lime juice, vinegar,
honey, spices, basil, and garlic powder;
stir in cornstarch until dissolved then set aside.
Line a roasting pan with aluminum foil for easy clean up.
Wash chicken and pat dry with paper towels.
Place chicken on the foil in the pan,
spread some of the spice mixture on it then
arrange oranges around chicken.
Cover and bake or roast for about an hour.
Uncover and cook a few more minutes to brown the chicken.
