With a few tricks, you can turn out
one of the best gravy dishes ever.
This recipe uses no flour, just fresh
tasting vegetables as a thickener.
Ingredients:
1 cup water
2 carrots
1 celery
1 onion, peeled and sliced
2 garlic cloves, peeled
1 bay leaf
1 tsp sweet basil
salt and pepper to taste
Directions:
Before you put your turkey in the roasting pan,
add water, onions, carrots, garlic, bay leaf, basil, salt and pepper.
Then place the turkey on top. Cover and roast in the usual manner.
After turkey is roasted and while it is resting to be carved,
you can make the gravy. Cool the pan juices and vegetables,
then puree them in a blender, or using an emersion blender.
The gravy will naturally thicken: adjust seasonings.
Should you find that the broth is greasy,
skim off the fat before putting it in the blender.
