You could use canned stewed tomatoes in this recipe.
Ingredients
2 cups uncooked rice
3 medium sized, vine ripened tomatoes
1 large onion
2 tbsp butter
1 tsp curry powder
1 cup water
Directions:
1.Prepare rice according to package directions
2.Scald and peel tomatoes; cut into quarters
3.Chop onion very finely
4.Add chopped onion and butter to a saucepan;
cook on medium heat until onions are tender
5.Add curry powder and water to saucepan; bring to boil
6.Add tomatoes to saucepan; cover and simmer for 20 minutes
7.Place prepared rice in a deep dish;
place tomatoes carefully around the edge
8.Pour the curry sauce over everything
