Fresh Chayote Salsa

The chayote, also known as chuchu, sayote,
tayota, choko, chocho, chow-chow, christophene,
mirliton, vegetable pear, and pear squash
is an edible plant that belongs to the gourd family.
When cooked, chayote is like summer squash,
it is lightly cooked to retain the crisp flavor.

Ingredients:
2 cups tomatoes
1 cup diced bell pepper
1 cup diced onions
1 bunch cilantro
6 limes
1/2 cup chili seasoning
6 chayotes

Directions:
Peel and dice the chayotes.
Place in a pot of cold water, bring to a boil.
Lower heat and simmer for a few minutes.
Remove from water and mix chayote pieces
with remaining ingredients.
Place mixture in a glass jar.
Allow to set for 24 hours.
