I figure this time of year you just might
have a few hard cooked eggs laying around.
(No pun intended).
This is a really good tasting deviled egg
recipe that I came up with using these eggs.
Even people that don't like deviled eggs like these.
Ingredients:
A dozen eggs, hard cooked, shelled
1/4 cup plus 2 tablespoons prepared mayonnaise
3 tablespoons chopped red onion, micro cooked 1 minute
1 tablespoon sweet smoked paprika, plus more for garnishing
2 tablespoons finely chopped fresh chives
3 tablespoons finely chopped fresh flat leaf parsley
1 teaspoon brown sugar
freshly ground black pepper to taste
Directions:
Slice each egg in half lengthwise and
carefully remove the yolk from each egg.
Place the yolks in a food processor.
Add the mayonnaise, onion, 2 teaspoons of the paprika,
chives and parsley and pulse until combined;
season with freshly ground black pepper.
Carefully spoon mixture back into the egg white halves
and sprinkle the tops of each with more paprika.
