As a kid growing up I was only exposed to
the egg yolk filled stuffed mayo eggs.
This is my really good and tasty recipe
for a kicked up seafood stuffed eggs.
Heaped high with a shrimp and yolk filling,
They are rich in protein and rich in flavor.
Ingredients:
12 large eggs, hard-cooked
1 (4 ounce) can baby shrimp, drained
1/4 cup plain yogurt
2 tablespoons canned black olives, chopped
1 tablespoon fresh chives, chopped
2 teaspoons fresh thyme
or 1/4 teaspoon dried thyme
1 teaspoon dry mustard
1/4 teaspoon black pepper
1/4 teaspoon sugar
lettuce leaf, if desired
1 sprig fresh thyme or chives, for garnish, if desired
Directions:
Peel and cut the hard cooked eggs
in half lengthwise; remove the yolks.
Set whites aside, carefully keeping them intact.
Mash yolks in a small bowl with a fork.
Add shrimp, sugar, yogurt, olives, chives, thyme,
dry mustard and black pepper; blend well.
Place the egg white halves on a plate.
Mound each egg white half with the shrimpy yolk mixture.
