These cookies are soft and chewy
with a small banana crunch bottom.
They came out great and you sure
can't buy them in any store!
I made a classic chocolate chip cookie batter
and dropped it onto dried banana chips.
Simply irresistible!
Ingredients:
1/2 cup butter, softened
1/2 cup shortening, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1/2 teaspoon baking soda
2 eggs
1 teaspoon vanilla
2 1/2 cups all purpose flour
1 12 ounce package semisweet chocolate pieces
Small pads of butter, about 1/8 teaspoon each
Dried banana chips, one for each cookie
Directions:
In a large mixing bowl, beat butter and
shortening in an electric mixer,
on medium to high speed, for 2 minutes.
Add brown sugar, granulated sugar and
baking soda then beat until combined.
Beat in as much flour as possible with mixer.
Stir in any remaining flour with a wooden spoon.
Stir in chocolate pieces and, if desired, nuts.
Place parchment paper on cookie sheet.
Drop a small amount of butter
on cookie sheet two inches apart.
Place one banana chip on each butter and then
drop dough by rounded teaspoons, 2 inches apart,
onto each banana chip on cookie sheet.
Bake in a 375 degree F. oven for 8-10 minutes,
or until edges are lightly browned.
Transfer cookies to a wire rack and let cool.
