Fresh Asparagus and
Roasted Red Bell Peppers

Ah... the asperigus is starting to
come up in the garden again this spring.
Here is a recipe I like to make.
Asparagus and Red Bell Peppers is a
super easy and colorful side dish
that takes just minutes to prepare.

Ingredients:
1 pound fresh asparagus
1 roasted red bell pepper,from a jar
3 tablespoons water
2 tablespoons olive oil
Salt and pepper to taste

Directions:
Snap tough ends off asparagus and discard.
Slice bell pepper into thin strips.
Place vegetables in skillet; add water.
Bring to a boil, cover, and steam
over medium-high heat for 2-3 minutes
until asparigus is almost tender.
Remove cover, add oil, salt, and pepper.
Cook over medium-high heat, stirring frequently,
until vegetables are glazed and tender,
about 2-3 minutes. Serve immediately.
