Microwaved Butternut Squash
with Butter and Pumpkin Spice

Butternut Squash cooks very well in the microwave.
It's a lot faster than baking it in the other oven.

Ingredients:
20 oz Fresh butternut squash
1/4 c Water
1 tb Butter or margarine
OR 1 tablespoon olive oil
1/4 cupmilk
1/4 cup Grated Parmesan cheese
1/4 teaspoon pumpkin spice mix

Directions:
Transfer squash cubes to a microwave casserole.
Add water and microwave, covered but not tight,
on high for 10 to 12 minutes or until very tender.
Add butter, spice mix, milk and cheese.
Season with salt and pepper.
Blend with a hand mixer until creamy.
