A creamy no-bake cheesecake with a crust
that's made out of melted chocolate chips
and topped with fresh strawberries.
Ingredients:
Crust:
16 ounces milk chocolate chips
2 tablespoons shortening
Cheesecake:
2 8 oz packages cream cheese
2/3 cup sugar
4 tablespoons freshly squeezed lemon juice
1/2 cup heavy cream
2 pints fresh strawberries, cut in half
Directions:
For crust:
In a double boiler, melt chocolate and shortening,
stirring occasionally until smooth.
When chocolate mixture is smooth, pour into springform pan,
and swirl until pan is covered.
Set remaining chocolate aside for garnishing finished cake.
Place crust in freezer while preparing cheesecake mixture.
For cheesecake:
Combine cream cheese, lemon juice and sugar
in mixer and beat until combined.
Lightly whip cream to soft peaks
and fold into cream cheese filling.
Remove crust from freezer and
pour filling evenly into pan.
Cover with plastic wrap and place
in freezer for 30 minutes.
Place strawberries on top of cheesecake
and drizzle remaining chocolate over top of cake.
