This great smoked salmon takes some time
but is well worth it. The garlic, onion and
chili powder mix perfectly with the brown sugar.
Ingredients:
1 salmon filet: about 1 pound, skin on
1-2 teaspoons brown sugar
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon white pepper
Directions:
In a small bowl, combine all seasonings.
Rub mixture on filet, discarding any leftover rub.
Place salmon fillet, skin side down,
in a pan and let stand in refrigerator 1 hour.
Meanwhile, in an outdoor smoker, arrange preheated coals,
drained wood chunks and water pan
according to manufacturer's directions.
Pour water into pan. Place fish, skin side down,
on a piece of foil on grate.
Cover smoker and grill 2-3 hours
or until fish flakes when tested with a fork.
