This is a good summer time salad,
you can add canned tuna, chicken,
or seafood for more protein.
Use your family's favorite type
of canned bean; chickpeas, kidney beans,
or black beans would work well.
Ingredients:
2 (15 oz.) cans butter beans, drained and rinsed
14.5 oz. can fire roasted diced tomatoes, drained
3 Tbsp. apple cider vinegar
6 Tbsp. olive oil
1/2 tsp. pepper or to taste
3 Tbsp. chopped fresh parsley
11 oz. can sweet corn, drained
1 red onion, peeled and chopped
1 lemon, juice of
Directions:
In large bowl, combine vinegar, lemon juice, olive oil,
salt, pepper, and parsley and mix well with wire whisk.
Add remaining ingredients and toss to coat.
Cover and chill 2 hours, serve.
