Everyone will say what is in this sauce?
First off you must have the ripest tomatoes.
This sauce is so good and nobody will ever
guess what exactly makes it taste so great.
Ingredients:
3 pounds vine ripe Roma tomatoes, quartered
2 Tablespoons fresh basil, chopped
1 Tablespoon extra virgin olive oil
salt to taste
black pepper to taste
1 whole green bell pepper ( secret ingredient )
1" stick pepperoni ( secret ingredient )
Directions:
Pour the olive oil in a heavy pan,
place the tomatoes and basil over top.
Add the green pepper and pepperoni.
Cover and cook over medium-high heat.
The tomatoes will start to break down after about 5 minutes.
Cook for about 15 minutes until the tomatoes are soft.
Remove the lid and reduce to low heat.
Simmer until the liquid starts to evaporate
and the tomatoes become thicker,
this could take anywhere from 20 minutes to an hour,
depending on the juiciness of your tomatoes.
Once the sauce is to your desired consistency,
remove the pepperoni and green pepper.
Use with fresh cooked pasta or ladle into
jars or ziplocs and freeze or refrigerate.
