Potato Salad for Picnics
Best Homemade Potato Salad

Homemade Cold Potato Salad is the perfect picnic dish.
Here's an easy recipe to make absolutely the very best
homemade cold potato salad that you, your friends
or family have ever tasted. This recipe is a good one!

Ingredients:
6 Medium-sized Potatoes
1/2 cup olive oil mayonaise
2 tablespoons sweet pickle relish
1 tablespoon spicy brown mustard
1/2 teaspoon Coleman's mustard powder
1/2 cup red onion, chopped
1/4 cup celery, chopped
3-4 hard boiled eggs, sliced
Freshly ground black pepper
Creole or Old Bay Seasoning
Iceberg lettuce for garnish

Directions:
Peel and dice Potatoes into small cubes about 1 inch in size.
Boil Potatoes until tender and easy to slice through.
This should take about 15-20 min.
When ready, drain water and place potatoes onto a large baking sheet.
Let potatoes cool and air dry.
In a large bowl, add chopped celery, onions, mustards and mayonaise.
Add black pepper, pickle relish and creole seasoning, refrigerate.
Cover bowl and refrigerate for at least one hour.
Arrange iceberg lettuce on the bottom of a serving bowl,
Place potato salad on top of lettuce with green showing around edges.
Arrange sliced eggs on top and sprinkle with more creole seasoning.
Chill in the refrigerator for at lest one hour.
