I make this recipe often, it's so simple
and yet very good, everyone likes it.
The chicken fat flavors the vegetables.
The vegetables are soft and browned well,
the chicken is juicy and tender good.
Ingredients:
3 tablespoons olive oil
2 carrots, peeled and cut up
2 celery stalks, cut up
1 large onion, peeled and chopped
4 red or russet potatoes, quartered
4 cloves garlic, peeled and crushed
2 tablespoons dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
4 chicken thighs or legs
Directions:
Pre-heat oven to 350 degrees F.
Place olive oil in a roasting pan.
Arrange all vegetables in pan.
Cover with seasonings.
Rinse chicken and place on top of vegetables.
Season chicken and cover roasting pan.
Bake for about 1 hour or until done.
Serve with cooked white rice if desired.
