Eggplant Grilled
Grilled Eggplant

I love eggplant, especially when grilled.
Eggplant can be baked, sauteed or grilled.
The best and freshest eggplants to grill
are firm to the touch with no unbroken skin.

Ingredients:
2 eggplant, semi-peeled
Olive oil
salt to taste
black pepper to taste

Directions:
Brush the eggplant with olive oil on both
sides and season with salt and pepper.
Grill for 3 to 4 minutes per side or
until lightly golden brown and charred.
Remove from the grill and cut each half
into half-inch-thick slices, serve.
