Orange, Olive and
Red Onion Salad

This is an attractive dish and the
red onion go surprisingly well with
the taste of the fresh orange wedges.

Ingredients:
6 large, juicy oranges, peeled
3 tablespoons red wine vinegar
6 tablespoons olive oil
1 teaspoon dried oregano
1 medium red onion sliced paper-thin
1 cup black olives
1/4 cup fresh chopped chives
Freshly ground black pepper
Several green lettuce leaves

Directions:
Cut oranges into wedges, remove any seeds.
Place in a shallow serving dish.
sprinkle with vinegar, olive oil, and oregano.
Toss and refrigerate about a half an hour.
Line the bottom of a platter with the lettuce,
remove the oranges from the refrigerator and toss,
gently arrange oranges on the lettuce leaves.
Arrange the sliced onions and
black olives over the oranges,
sprinkle with the chives, and ground pepper.
