Spanish Cold Tapas
Marinated Mushrooms

These are really good marinated mushrooms.
Decorate with some chopped fresh chives.
To make a pincho, put some goats cheese on top
of some slices of bread and place under a medium grill.
Once the cheese is soft and grilled, put a spoonful
of marinated mushrooms on top and serve.

Ingredients:
3 tbsp olive oil
1 small onion finely chopped
1 clove of garlic crushed
1/2 small glass of white wine

1/2 small glass of water
salt and pepper
4 cups mushrooms (preferably small)

Directions:
Heat the oil in a heavy based pan.
Add the finely chopped onion and garlic season
with salt and pepper and sauté for 5 - 10 minutes.
Add the wine and water and simmer for 20 minutes.
Clean the mushrooms and slice thinly then add them
to the pan and cook for a further 10 minutes.
Place everything in a serving dish and set aside to cool
before placing it in the fridge - serve cold.
