This recipe is called city chicken.
Made with cubes of veal and pork.
So good and crunchy on the outside,
juicy and tender on the inside.
I've made these skewers on the BBQ grill,
inside on the stovetop and in the oven.
I like them best in the oven, less work.
Ingredients:
1 1/2 lbs. cubed pork
1 1/2 lbs. cubed veal
salt to taste
pepper to taste
flour for dredging
egg to make crumbs stick
Fine cracker crumbs
Directions:
Place meat cubes alternately on skewer sticks.
Season with salt and pepper. Roll in flour,
then in beaten egg. Now roll in fine cracker crumbs.
Brown in butter in frying pan.
Bake covered for 1 hour at 350 degrees F.
