Watermelon, Feta
and Olive Salad

This is a cool summer salad with
red onion slices and fresh herbs
along with watermelon and Feta.
I also like this with gorgonzola
and even have tried it with bleu.
Everyone that tries this loves it!

Ingredients:
6 cups seedless watermelon, cut in chunks
3 ounces Feta or Bleu cheese, cubed
1 small red onion, peeled and sliced
1 cup black olives, pitted and halved
Fresh herbs like mint or basil
1/8 cup olive oil
3 tablespoons apple cider vinegar

Directions:
Place cut up watermelon in a large bowl.
Add cheese, onion, olives and fresh herbs.
Dress with olive oil and vinegar,
toss to combine well and serve.
