There's plenty of heat in the chili.
Bell peppers and onion round out the
good flavors of the herbs and spices.
This is a recipe to serve a crowd.
Ingredients:
2 lb ground beef 85/15
1 medium onion, peeled and chopped
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 (28oz) can whole tomatoes
1 (6oz) can tomato paste
4 cloves garlic, peeled and minced
1 tsp salt or to taste
4 tsp chili powder
1 tsp ground cumin
2 tsp cayenne pepper
1 tsp black pepper
5 cans dark red kidney beans, drained, rinsed
1 (12oz) can beer
Directions:
In large sauce pan or stew pot,
brown the ground beef and onion, drain.
Add the beer, bell peppers, tomatoes,
paste, garlic, salt, chili powder,
cumin and black peppers. Bring to boil,
reduce heat, cover and simmer 1 hour.
Add kidney beans and simmer until heated.
Serve over noodles with sour cream
and grated chedder cheese.
