Baba Ghanouj
with Grilled Eggplant

I like Baba Ghanouj made
with grilled eggplant.
It has a totally different
flavor than the plain.
Kind of a smokey taste.

vegetable cooking spray
2 eggplants peeled and halved
4 cloves garlic, peeled
2 oz tahini
3 tbsp fresh lemon juice
1/2 tsp salt or to taste
dash paprika

Coat a grill rack with cooking spray;
place on grill over medium-hot coals.
Place eggplant, cut side up, on rack;
cook 20 minutes or until very tender.
Remove eggplant from grill; let cool slightly.
Peel eggplant; set aside.
In food processor add garlic.
Pulse 4 times until garlic is finely chopped.
Add peeled eggplant, tahini,
lemon juice and salt, and process until smooth.
Cover and chill; sprinkle with paprika.
Serve with toasted pita chips.
