Black Bean Dip with
Monterey Jack Cheese

This is a recipe for making a
Mexican inspired black bean dip.
It's heat is kicked up a bit and
it has Monterey jack cheese in it.

Ingredients:
15 oz black beans drained
1 tsp vegetable oil
4 oz onion chopped
2 cloves garlic minced
4 oz tomato diced
1/3 cup hot picante sauce
1/2 tsp ground cumin
1/2 tsp chili powder
2 oz Monterey jack cheese shredded
2 oz fresh cilantro chopped
1 tbsp fresh lime juice

Directions:
Place beans in a bowl;
partially mash until chunky. Set aside.
Heat oil in a skillet over medium heat.
Add onion and garlic; saute until tender.
Add beans, tomato, picante sauce, cumin
and chili powder; cook 5 minutes
or until thickened, stirring constantly.
Remove from heat; add cheese, cilantro
and lime juice, stirring until cheese melts.
Serve warm or at room temperature.
