Bolognaise Boboli Pizza

This is a recipe to make a bolognaise
pizza using a ready made Boboli dough.
It's like eating the sauce on a crust.
Simply delicious!

Ingredients:
1/2 cup onions, diced
1/2 cup carrots, diced
1/4 cup celery, diced
1 tbsp. butter
1/2 lb. ground pork, lean
1/4 lb. ground veal, lean
28 oz. tomatoes, canned, coarsely chopped
1/2 cup red wine, dry
1-1/2 cups Mozzarella, cut into 1/2' cubes
Salt and pepper to taste
1 Boboli pizza crust
2 tbsp. grated parmesan cheese
1 tbs. Parsley, coarsely chopped

Directions:
Saute onions, carrots and celery in butter
in saucepan until crisp but tender.
Add pork and veal. Saute until it
loses pink color; drain excess fat.
Add tomatoes and wine. Simmer, uncovered,
stirring occasionally until most
of it is reduced, about 20 minutes.
Add Mozzarella cheese stirring
until almost melted.
Add salt and pepper to taste.
Fill pizza crust leaving a 1" border.
Sprinkle with Parmesan cheese and parsley.
Bake 8-10 minutes on a baking sheet
in lower 1/3 of oven. Cool slightly and serve.
