With the garden tomatoes turning red
I thought I'd share this recipe with you.
I made this for a party we were giving
and it was such a big hit with everyone.
Ingredients:
4 ripe beefsteak tomatoes , diced
1/2 red onion , very thinly sliced
1 cup feta cheese, crumbled
1 cup chopped black olives
1/4 tsp. fresh rosemary leaves
3 Tbsp. fresh flat-leaf parsley , chopped
1/4 cup extra-virgin olive oil
2 Tbsp. red wine vinegar
Salt to taste
freshly ground pepper
Directions:
Combine tomato, onion, rosemary, parsley,
feta, olives, oil, and vinegar in a large bowl.
Season to taste with salt and pepper.
