Oven Fried Chicken
with Hot Pepper Sauce

This is a recipe that uses a
hot pepper sauce to heat up
a few chicken breast halves.

Ingredients:
4 chicken breast halves
1/3-cup milk
2 tsp. hot pepper sauce
1/4 cup seasoned dry breadcrumbs
1/4 cup yellow corn meal
1 tsp. each salt, dried cilantro, chili powder
1/4 tsp. each cumin, cayenne pepper

Directions:
Preheat oven to 425 degrees F.
Spray cookie sheet lightly with olive oil cooking spray.
For less fat, remove skin and fat from chicken; discard.
Rinse chicken, pat dry.
Combine milk and hot pepper sauce.
Combine the remaining ingredients in separate bowl.
Place Chicken in milk mixture, turning to coat
Dip chicken in crumb mixture, turning to coat.
Place chicken, meat side up, on cookie sheet.
Spray with olive oil spray. Cook 20 minutes
(10 for boneless chicken).
Spray again with olive oil spray.
Bake 10 to 15 minutes until juices run clear.
