Basil Pesto
Baked Tilapia

The meal came together very easily
and it was really good tasting!
The fish was super moist and along
with the lemon, pesto and roasted
cherry tomatoes it was a winner.

Ingredients:
2 tilapia fillets
8 cherry tomatoes
4 cloves garlic, peeled and minced
2 teaspoons olive oil
Salt to taste
Black pepper to taste
1 lemon, juice and zest
2 tablespoons basil pesto
Melted butter

Directions:
In a bowl toss the tomatoes and
garlic in the olive oil, salt and pepper.
Place on a baking pan and bake in a
preheated 425 degree F. oven for 10 minutes.
In another bowl mix the lemon juice and pesto.
Season the fish with salt and pepper to taste.
Spread the basil pesto with lemon onto the fish.
Chop the lemon rind into thin slices.
Add the lemon slices to the tomatoes
in the pan and set the fish on top.
Bake until it's white and flaky,
about 10 minutes, serve with melted butter.
