Sand dab is found in the Pacific Ocean
from California north to Alaska.
It's a popular game fish and is
regarded as a delicacy by some.
Here is a simple yet good recipe
for breading it and frying it up.
Ingredients:
4 Sand Dabs
1/4 cup flour
1/4 cup yellow cornmeal
1/2 teaspoon salt or to taste
1/4 teaspoon ground black pepper
1 cup buttermilk
Vegetable oil (for deep frying)
Directions:
Mix cornmeal with flour, salt and pepper.
Dip fish in buttermilk,
then coat with cornmeal mixture.
Pour oil to a depth of 1 1/2 inches in skillet.
Heat until hot, then add fish.
Cook until golden, turning once.
Garnish with parsley and lemon slices, if desired.
