I can't believe how good this is.
Simple is sometimes the best.
With fresh zucchini and basil
some butter and cherry tomatoes.
This should win a cooking contest,
it even looks impressive when served.
Ingredients:
9 slices of zucchini, 1/2"
1 tablespoon unsalted butter
10 cherry tomatoes
4 fresh basil leaves, chiffonade
1 teaspoon sugar
salt to taste
pepper to taste
Directions:
Place butter around bottom
of a glass cake pan.
Sprinkle with sugar.
Sprinkle basil around bottom of pan.
Arrange zucchini in one layer in pan.
Arrange tomatoes between slices of
zucchini in cake pan.
Season with salt and pepper.
Cover and microwave 4 minutes.
Remove and let sit about
2 minutes before serving.
