Soup from Zucchini
and Cherry Tomatoes

This recipe is the result of another
zucchini recipe I had come up with.
After cooking the zucchini and the
cherry tomatoes there was enough
liquid in the dish to make a great
tasting basil and chicken broth soup.

Ingredients:
1 cup chicken broth
9 slices of zucchini, 1/2"
1 tablespoon unsalted butter
10 cherry tomatoes
4 fresh basil leaves, chiffonade
1 teaspoon sugar
salt to taste
pepper to taste

Directions:
Place butter around bottom
of a glass cake pan.
Sprinkle with sugar.
Sprinkle basil around bottom of pan.
Arrange zucchini in one layer in pan.
Arrange tomatoes between slices of
zucchini in cake pan.
Season with salt and pepper.
Cover and microwave 4 minutes.
Remove zucchini for another meal,
add the chicken broth and serve.
