Cherry Tomatoes in a
Red Wine Vinaigrette

Fresh from the garden ripe cherry tomatoes
washed, stemed, and halved in a deliciously
balanced sweet and sour red wine vinaigrette.
O.k. I know not all of us have fresh garden
tomatoes, this is almost as good using store
bought tomatoes, but fresh is always best.

Ingredients:
6 red cherry tomatoes
6 yellow cherry tomatoes
6 orange cherry tomatoes
1/2 cup diced red onion
1 tablespoon white sugar
1 tablespoon red wine vinegar
1/4 teaspoon table salt
1/4 teaspoon dried chives

Directions:
Wash, de-stem and halve tomatoes.
In a mixing bowl combine sugar,
vinegar, salt and chives.
Add tomatoes to bowl stirring
to combine and coat tomatoes well.
Cover and let sit at room temperature
for flavors to ripen, serve.
