Hawaiian Peach
Bread Pudding

A warm peachy bread pudding goes great
with some whipped or vanilla ice cream.
In this recipe I use some day old Hawaiian
sweet bread with raisins and add in
some butterscotch chips for an added flavor.

Ingredients:
4 cups cubed Hawaiian bread
3 large eggs, beaten
2 cups fat free milk
1/2 cup granulated sugar
1/2 teaspoon almond extract
4 cups fresh peaches,
peeled and chopped
1 cup butterscotch chips
1/2 teaspoon cinnamon
2 tablespoons brown sugar
2 tablespoons sliced almonds
1 1/2 teaspoons unsalted butter,
cut into small pieces


Directions:
Preheat oven to 350 degrees F.
Place bread cubes in a mixing bowl.
Whisk together eggs, milk,
granulated sugar and almond extract.
Stir in fresh peaches, reserving
1/2 cup for use as a topping.
Pour mixture over bread cubes;
press into bread with back of spoon.
Butter a 11 x 7-inch baking pan.
Combine cinnamon and brown sugar
and sprinkle on top of bread mixture.
Add sliced almonds, butterscotch chips
and dot top with unsalted butter.
Bake 50 to 55 minutes or until
a knife inserted comes out clean.
