This is a chocolate chip banana bread,
and of course this recipe makes great
muffins for an on the go snack treat.
Ingredients:
1 3/4 cups flour
3/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup vegetable oil
1/2 cup plain yogurt
1 egg
1 tsp. vanilla extract
3 ripe bananas mashed
3/4 cup chocolate chips
Directions:
Combine oil, yogurt, egg, vanilla
and sugar in a large bowl.
Mix well. Add in flour, baking powder,
baking soda and salt all at once.
Stir until just moistened.
Fold in mashed bananas and chocolate chips.
Pour into large loaf pan (or two smaller).
Bake at 350 degrees F. for about 45 minutes
(less if you are making smaller loaves).
