Using pre-cooked shrimp makes this
a quick to make creamy shrimp salad.
This keeps well in the refrigerator.
Ingredients:
4 oz sour cream (1/2 cup)
1 1/2 tsps curry powder
1/4 tsp salt
1/4 cup mayonnaise
1 fl oz lime juice (2 tbsp)
4 stalks large celery, thinly sliced
1 large cucumber; peeled, seeded and sliced
1 1/2 lbs shrimp; peeled, deveined and cooked
Directions:
Whisk together sour cream, mayonnaise,
lime juice, curry powder and
salt in a large bowl.
Add shrimp, celery and cucumber;
toss gently to coat.
Refrigerate until ready to serve.
