Nothing compares to a red ripe and
freshly picked from the garden tomato.
This is a simple salad to make which
will knock your socks off in flavor.
Ingredients:
About 2 pounds of homegrown tomatoes,
assorted shapes, sizes, colors, etc.
Sea salt and freshly ground black pepper
Extra virgin olive oil
2 teaspoons of fresh thyme,
plus a few whole sprigs for garnish
Directions:
Thinly slice tomatoes and arrange all of
the tomato slices on a large platter.
Season with salt and pepper, and
drizzle with the olive oil.
Sprinkle with the thyme, and lay
the sprigs of thyme over top as garnish.
Allow the platter to sit in the sun for
15-20 minutes before serving this dish.
This helps the flavors to combine,
and brings out the natural fragrance
of the fresh thyme and tomatoes.
