With toasted coconut and mandarin oranges
this is a really good tasting chicken
salad wrapped in a flour tortilla.
Ingredients:
2 cups cooked skinless chicken, shredded
1 small can mandarin oranges, drained
1/2 cup shredded coconut, toasted
1/2 cup roasted cashews
1 bunch scallions, chopped
Juice of 1 lime
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup mayonnaise
1 handful lettuce leaves, for garnish
Directions:
Combine first 8 ingredients in a large bowl.
Add mayonnaise, tossing to coat evenly.
Place lettuce on flour tortillas.
Add chicken mixture and roll up.
